Light and Dark Peanut Butter Cups

These have to be one of my favorite recipes yet! With only 4 ingredients, this is definitely one of my go to treats.

  • Start by melting coconut oil and chocolate in a saucepan - I made half white chocolate and half with carbon chips for my dairy free friends.

  • Once it is melted, pour the mixture into lined muffin tins but only fill them about half way.

  • In another bowl mix together peanut butter or nut butter of your choice with a little bit of honey.

  • Scoop a small spoonful on the center of each of the coconut oil/chocolate molds.

  • Pour the remaining mixture on top of the peanut butter so it is covered

  • Place in the freezer for an hour or until solid.

The beauty of this recipe was that I did not measure a thing. I just added as much as I wanted and used it until it was gone! One tip I will give you is that a little coconut oil goes a long way. Start with a small amount and if your chocolate mixture is too thick add a little more!
