Light and Dark Peanut Butter Cups
These have to be one of my favorite recipes yet! With only 4 ingredients, this is definitely one of my go to treats.
Start by melting coconut oil and chocolate in a saucepan - I made half white chocolate and half with carbon chips for my dairy free friends.
Once it is melted, pour the mixture into lined muffin tins but only fill them about half way.
In another bowl mix together peanut butter or nut butter of your choice with a little bit of honey.
Scoop a small spoonful on the center of each of the coconut oil/chocolate molds.
Pour the remaining mixture on top of the peanut butter so it is covered
Place in the freezer for an hour or until solid.
The beauty of this recipe was that I did not measure a thing. I just added as much as I wanted and used it until it was gone! One tip I will give you is that a little coconut oil goes a long way. Start with a small amount and if your chocolate mixture is too thick add a little more!
