Lentil Pasta with Ground Turkey
¾ cup-1 cup of dried lentil pasta (can substitute for whole grain pasta)
100 grams of lean ground turkey (can substitute for ground beef)
½ cup of low sodium Marinara sauce
½ cup of chopped mushrooms
2 tbsp. of olive oil
seasonings: oregano, garlic powder, sea salt, black pepper.
Cook Pasta according to package instructions
Heat Sauce pan over medium heat
add olive oil
Add defrosted ground turkey
add all the seasonings and brown meat for 2 minutes, stirring occasionally
Add Marinara sauce and mushrooms
Once it reaches a rolling boil, lower heat and cook for about 20 minutes.
Serve over pasta
Sprinkle some low fat mozzarella cheese or dairy free cheese on top.
