Zucchini Pasta with Salmon



Ingredients:

1 zucchini

¼ cup of mushrooms

¼ cup of Marinara sauce

½ cup of grape tomatoes

Salmon

1 Salmon filet

1 tbsp. of olive oil

Italian spices

Salt and pepper

Garlic powder

Recipe:

  1. Brush the salmon filet with olive oil, Italian spices, salt and pepper, garlic powder, and bake on broil for 10 mins.

  2. While salmon is cooking, heat a large skillet over medium-high heat. Mix tomato sauce, mushrooms, tomatoes, salt, basil, oregano, garlic powder, onion powder, thyme, and red pepper flakes into ground beef; cook and stir until sauce is warmed through, about 2 minutes. Stir tomato paste into sauce.

  3. Mix zucchini "noodles" into sauce, pressing down to fully submerge them; simmer over medium-low heat until zucchini is tender, about 10 minutes.

  4. Serve the zucchini pasta with the salmon and sprinkle some cheese on top.
